I am always looking for new ways to use up leftovers. So when my mom sent me home with some leftover baked sweet potatoes, I knew I wanted to stray away from my usual baked sweet potato with black beans, corn, cheese and sour cream on top. It gets old after a while! That’s when sweet potato gnocchi came to my mind. Yes, please!
My fiance got me Chrissy Teigen’s Cravings cookbook for Christmas and she has a wonderful sounding sweet potato gnocchi recipe in there but I didn’t have all of the ingredients on hand. After some Googling and Pinteresting, I found some recipes for 2 ingredient gnocchi. Yes! 2 ingredients!
sweet potato + flour = YUM
I definitely had flour on hand, so I got to it!
First, mash up one baked sweet potato. You could prick the potato with a fork and simply pop it in the microwave for 8-10 minutes so you don’t have to bake it.
Sprinkle 1/2 a cup of flour on top of the mashed sweet potato…
…and mix it together by hand into a dough ball. Everywhere I read said DO NOT over mix, so as soon as the dough ball formed, I stopped.
Divide the ball into 4 pieces and form each piece into a log, about 1/2 an inch thick.
Cut the logs into 1 inch pieces…
…and make those cute little fork marks! I found it easier to get some flour on the fork every 4th or 5th gnocchi so it didn’t stick. While cutting the pieces and making the marks, start boiling a pot of water. Once all of the pieces are cut, place the gnocchi in the boiling water. They’re done once they float to the top.
I made a brown butter sauce with butter, garlic, pepper, parmesan, crushed red peppers, and kale.
And that’s it! This could probably make two servings if you weren’t a total heathen like me. I left a few pieces for my fiance to try and he was so sad that I didn’t leave more for him, which just means I’ll have to make it again!
