What better way to enjoy the Summer than by soaking up the sun, sporting your favorite shades, and hanging out with friends….with a cold drink in your hand?
During the hot Summer months, Strawberry Lemonade is my go-to drink, which I try and keep stocked in my fridge at all times, but never seems to last more than a day in my house. If you’ve never tried making Strawberry Lemonade from scratch, you should. It’s super easy and will have you wanting seconds, and thirds….maybe even fourths.
For Strawberry Lemonade here’s what you’ll need!
2 cups water
1 cup sugar
1 cup freshly squeezed lemon juice (about 4-5 large lemons will do the trick)
1 1/2 tablespoons grated lemon peel
1 pint of fresh strawberries, hulled and halved*
2 cups club soda
*Set a few whole strawberries aside for garnish
In a medium saucepan bring water and sugar to a boil. Once boiling, reduce heat and let simmer until sugar is completely dissolved. Add lemon juice and lemon peel and remove from heat. Set aside until completely cooled.
Toss strawberries in a blender on the ‘pulse’ setting until completely puréed. In a pitcher combine strawberry purée and lemon juice mixture. Stir until well combined and refrigerate for 1 to 2 hours. Once chilled, add club soda and stir. Serve over ice filled glasses, garnish with a strawberry, and enjoy.
