Everyone, meet Riley Penelope! Or as Jennifer likes to call her, Zoe Riley Penelope (she could never remember her name at first).
Riley is the morkie (half yorkie, half maltese) my boyfriend and I got last year. She loves all people, tummy rubs, and watching me workout (see picture of her chewing on my weights). Today is a special day for Riley because it’s her first birthday! And what does any ridiculous dog owner do when their furbaby has a birthday? Bake them homemade pupcakes, of course!
Riley’s Birthday Pupcake
1/4 cup applesauce
1 tbs honey
1/2 cup shredded carrots*
1/2 cup whole wheat flour
1/2 tsp baking soda
1-2 tbs water
1 tbs peanut butter
1 tbs plain yogurt
Wine; because I want to celebrate, too.
*I chopped these up a little smaller, they were really long and I didn’t want Riley to choke.
Preheat oven to 350 degrees F. Mix applesauce, honey, and carrots together. Mix flour and baking soda and add to the wet ingredients. If you feel the batter is too thick, add a little bit of water. I only needed 1 tablespoon. Pour batter into lightly greased muffin tin and bake for 20 minutes. Set aside to cool. Mix together peanut butter and yogurt for the icing. Once cooled, ice the pupcake and set in the fridge until it’s ready to be devoured!

Since she’s just a whopping 4 pounds, one of these pupcakes will probably last her whole birthday week. Happy Birthday, Riley Penelope!
