As much as I love having brunch and catching up with girlfriends, I don’t always have the money to spend on mimosas, possible appetizers, and an entrée. So, when Desiree suggested we grab brunch this past weekend I had a better idea; make our own instead!
After throwing a few ideas around we ultimately decided on adding a twist to one of our all-time favorites, French Toast. Our version: Croissant French Toast drizzled with honey, a sprinkle of powdered sugar, topped with sweet strawberries, and your favorite mid-morning cocktail (we chose mimosas).
2 Large Croissants (halved)
3 Large Eggs
1 tsp Vanilla Extract
1 1/2 tsp Light Brown Sugar
1/4 tsp Cinnamon
2 1/2 tbs Unsalted Butter
In a large bowl, whisk together eggs, vanilla, cinnamon, brown sugar, and a dash of milk. Set aside.
In a large skillet, melt butter over medium-high heat. Dip croissants in egg mixture. Fry until golden brown on each side. Once plated, drizzle with honey, a sprinkle of powdered sugar, and top with sliced strawberries. Please note: mid-morning cocktails are a must!
Although this grocery list may sound like a lot, keep in mind, you probably already have the majority of these items in your fridge and pantry. Bon appétit!
