Movie nights are always a fun get together for some much needed girl talk, laughter, and good food. Sometimes we want to pig out on pizza and beer, but other times we like to try to eat a little healthier. Rather than overindulging to the point where we can barely move, we decided to make a few snacks that we wouldn’t feel too bad about. First things first, we needed a tasty cocktail in our hands ASAP!
We started off with a Pineapple Upside Down Martini. This super refreshing drink had us feeling like we were on a mini vacation with each sip. It may not be the healthiest option out there, but hey, we snacked on pineapple slices to make up for it!
Here’s what you’ll need!
Pineapple Upside Down Martini
6 oz can pineapple juice
2 parts rum
1 part vodka (optional)
Add ice, pineapple juice, and alcohol to a martini shaker. Shake well. Pour into a martini glass. Slowly pour grenadine down the side of the martini glass to ensure it all goes to the bottom of the glass, then garnish with a slice of pineapple.
Next up would usually be a large, cheesy pizza dripping with grease and loaded up with carbs. Instead, we made some freshly popped Margherita Pizza Popcorn with far less calories.
Margherita Pizza Popcorn
1/2 cup popcorn kernels
1/2 cup melted butter
1 tsp Italian seasoning
1 tsp red pepper flakes
2 tbsp grated parmesan cheese
1 tbsp sun dried cherry tomatoes, finely chopped
salt to taste
Make popcorn and set aside in a large bowl. Mix Italian seasoning, red pepper flakes, sun dried tomatoes, and grated parmesan in a small bowl. Stir until well combined. Slowly drizzle melted butter evenly onto popcorn. Add seasoning mix. Toss popcorn to evenly distribute butter and toppings. Serve.
For more flavor, line a baking sheet with foil and coat with baking spray. Preheat oven to 300ºF and bake for 10 to 15 minutes, until popcorn is dry.
We still wanted to snack on something warm and cheesy, so instead of giving in and ordering a pizza we decided to make Spinach Artichoke Dip. Instead of using just chips to dip, we also used freshly cut vegetables. Recipe below.
Spinach Artichoke Dip
8 oz package softened cream cheese
8 oz sour cream
2 cups mozzarella
1/2 cup parmesan
2 tbsp milk
1/2 chopped onion
5 cloves chopped garlic
6.5 oz jar artichoke hearts, chopped
1 cup fresh spinach, chopped
1/4 cup Panko bread crumbs and grated parmesan, mixed
chips and/or freshly cut vegetables (carrots, celery, etc.)
Preheat oven to 350ºF. Over medium-high heat, sauté onion stirring occasionally until brown and caramelized. Add garlic and stir for 1 minute before removing from heat. In large bowl combine cream cheese, sour cream, mozzarella and parmesan. Once combined add in the sautéed onion and garlic, artichoke hearts, and spinach. Transfer ingredients to a lightly greased loaf pan. Top with Panko parmesan mix. Bake for 25 – 30 minutes, or until lightly browned and bubbly.
Last but not least was dessert! Instead of brownies and ice cream, we opted for Banana Boats. The end result was just as gooey and delicious as a fresh hot brownie.
Here’s what you’ll need to make this tasty treat!
Chocolate Chip & Marshmallow Banana Boats
2 tbsp mini marshmallows
2 tbsp mini chocolate chips
Preheat oven to 375ºF. Slit banana length-wise, down the middle, making sure not to cut all the way through. While still in the peel, gently mash down banana with a fork or spoon. Top with mini chocolate chips and marshmallows. Lightly wrap banana in foil and bake for 10-15 minutes.
Once snacks were ready and our glasses were full, it was movie time! Since it was a girl’s night in we chose This Means War featuring Reese Witherspoon, Tom Hardy, and Chris Pine.
